Vegetable Lasagna Recipe – What You Need
Lasagna Noodles (no-precook and preferably whole wheat)
1 Large Eggplant
1 onion (white or red)
Fresh basil leaves
2 tablespoons of chopped black olives
Extra virgin olive oil
1 1/2 cups of ricotta cheese
1 1/2 cups of cottage cheese
2/3 cup of grated parmesan cheese
2/3 cups of grate mozzarella
2-4 cloves of garlic (crushed)
1 red bell pepper
1 green bell pepper
1 pound of fresh tomatoes (whole cherry or roma tomatoes work best)
10 large mushrooms (white or portabella work great)
Start by chopping the zucchini, eggplant, onion, mushrooms, and peppers into large pieces. Add these in with the tomatoes and garlic with a few tablespoons of extra virgin olive oil, a little bit of sea salt, and pepper. If you use larger tomatoes or roma tomatoes, you will want to chop them into large chunks, but with the cherry tomatoes, you can leave them whole. Stir all this together very well and roast in the oven for 45 minutes at 400 degrees or until the vegetables are very soft and start to brown.
While the vegetables are cooking, you will want to create your cheese mixture. Mix the ricotta, cottage, and half the parmesan cheese together with about five leaves of basil diced up into small pieces. Add in a little bit of sea salt and pepper and mix well. Once the vegetables are fully cooked, remove your roasting tray and stir in the olives and basil. You want to chop the fresh basil leaves into smaller pieces and use about 10 to 15 leaves. Next, you will want to layer the lasagna, which means you need to boil your noodles. Make sure they are soft, but not fully cooked, as they will cook more once the completed dish is in the oven.
You can use paper towels to lay out the noodles and dry them out before you layer the lasagna. Start with a layer of about one third of the vegetable mixture at the base of your heatproof baking dish. Sprinkle one third of the grated mozzarella onto the top of the vegetable mix, then cover with a layer of lasagna noodles.
Next, create a layer with one third of your cheese mixture followed by another layer of one third of your vegetable mixture. Again, sprinkle one third of the mozzarella on top of the vegetable mixture followed by a layer of lasagna noodles. Repeat this layer one more time and finish with the final third of the cheese mixture on the top of your dish. Sprinkle the final half of the parmesan cheese on the top and you are ready to cook. Bake your vegetarian lasagna for 30 to 40 minutes or until golden brown. Cook it at 375 degrees and make sure to check it after 20 minutes, then again every 5 minutes until completely cooked. This lasagna recipe is best to serve with a nice salad and garlic bread. It will also pair well with an Italian red or white wine.
A Very Easy Lasagna Recipe for the Beginning Cook
If you are looking for a more traditional lasagna dish, then you need an easy lasagna recipe to help. This type of lasagna recipe will use many premade ingredients that will not have the big and bold flavors as a completely homemade dish, but it is still a great way to make a nice lasagna meal. Here is the easiest lasagna recipe.
What You Need for an Easy Lasagna Recipe
1 box of no boil lasagna noodles
1 pound of ground beef
Shaker of basil
2 cups of ricotta cheese
1 cup of cottage cheese
1/2 cup of parmesan cheese
2 cups of mozzarella cheese
1 large jar or can of marinara sauce
1 large onion
Shaker of garlic salt
Shaker of black pepper
Start by browning the ground beef in a frying pan while heating up the marinara sauce. Add 2 teaspoons of garlic salt and basil to the marinara sauce and bring it to a boil. Once it is boiling, lower the heat to a simmer. Chop your onion into small pieces and add it to your sauce. You can also add a green pepper or other vegetables, if you prefer. Now, you need to create your cheese mixtures. Simply mix the ricotta, cottage, and half your parmesan cheese in a large mixing bowl with one teaspoon of basil, one teaspoon of garlic salt, one teaspoon of black pepper. Mix thoroughly until all ingredients are combined. You are now ready to layer your lasagna.
Preheat your oven to 375 degrees. Start with a layer of no boil lasagna noodles at the bottom of a heatproof pan. Then, cover with half your ground beef and top with half the marina sauce. Sprinkle half the mozzarella cheese on the top of your sauce and create another layer of noodles. On top of the noodles add half your cheese mixtures and repeat with ground beef, sauce, mozzarella cheese, and noodles.
Finish with a layer of your cheese mixture and sprinkle the rest of your parmesan cheese on top. Now, cook for 25 to 35 minutes in the center of your oven or until the top is golden brown.
A Homemade Lasagna Recipe
If you want to make homemade lasagna, you can change the easy lasagna recipe a little bit. Instead of using a premade sauce, you can make your own tomato sauce from cherry or roma tomatoes. You can also substitute canned tomato sauce and use fresh basil to create your own sauce. Another key to changing this recipe to a homemade version is to use noodles that have to be boiled. These can be found in either a white pasta or wholewheat
You can also replace the garlic salt with actual crushed cloves of garlic and you can use fresh basil for everything. You can even change the meat a bit and add in sausage, buffalo, or another ground meat you like. This will help to bring out more flavors, and even though it may not be as easy to make, it will turn out with bolder flavors than using a premade sauce and no boil noodles.
Regardless of whether you want to make vegetable lasagna or you want to make meat lovers lasagna, you can adapt these two types of lasagna recipe to your needs. It is possible to change the vegetables to fit what you want and add in any other flavors you prefer. Just remember, a lasagna recipe is a guide and is not set in stone.
