1 Large Eggplant
2-3 Zucchini
1 onion (white or red)

2 tablespoons of chopped black olives
Extra virgin olive oil
1 1/2 cups of ricotta cheese
1 1/2 cups of cottage cheese
2/3 cup of grated parmesan cheese
2/3 cups of grate mozzarella
2-4 cloves of garlic (crushed)
1 red bell pepper
1 green bell pepper
1 pound of fresh tomatoes (whole cherry or roma tomatoes work best)
10 large mushrooms (white or portabella work great)

Start by chopping the zucchini, eggplant, onion, mushrooms, and peppers into large pieces. Add these in with the tomatoes and garlic with a few tablespoons of extra virgin olive oil, a little bit of sea salt, and pepper. If you use larger tomatoes or roma tomatoes, you will want to chop them into large chunks, but with the cherry tomatoes, you can leave them whole. Stir all this together very well and roast in the oven for 45 minutes at 400 degrees or until the vegetables are very soft and start to brown.

While the vegetables are cooking, you will want to create your cheese mixture. Mix the ricotta, cottage, and half the parmesan cheese together with about five leaves of basil diced up into small pieces. Add in a little bit of sea salt and pepper and mix well. What You Need for an Easy Lasagna Recipe
1 box of no boil lasagna noodles
1 pound of ground beef
Shaker of basil
2 cups of ricotta cheese
1 cup of cottage cheese
1/2 cup of parmesan cheese
2 cups of mozzarella cheese
1 large jar or can of marinara sauce
1 large onion
Shaker of garlic salt
Shaker of black pepper

Start by browning the ground beef in a frying pan while heating up the marinara sauce. Add 2 teaspoons of garlic salt and basil to the marinara sauce and bring it to a boil. Once it is boiling, lower the heat to a simmer. Chop your onion into small pieces and add it to your sauce. You can also add a green pepper or other vegetables, if you prefer. Now, you need to create your cheese mixtures. Simply mix the ricotta, cottage, and half your parmesan cheese in a large mixing bowl with one teaspoon of basil, one teaspoon of garlic salt, one teaspoon of black pepper.
