2 tablespoons of chopped black olives<br />
Extra virgin olive oil<br />
1 1/2 cups of ricotta cheese<br />
1 1/2 cups of cottage cheese<br />
2/3 cup of grated parmesan cheese<br />
2/3 cups of grate mozzarella<br />
2-4 cloves of garlic (crushed)<br />
1 red bell pepper<br />
1 green bell pepper<br />
1 pound of fresh tomatoes (whole cherry or roma tomatoes work best)<br />
10 large mushrooms (white or portabella work great)</p>
<p>Start by chopping the zucchini, eggplant, onion, mushrooms, and peppers into large pieces. Add these in with the tomatoes and garlic with a few tablespoons of extra virgin olive oil, a little bit of sea salt, and pepper. If you use larger tomatoes or roma tomatoes, you will want to chop them into large chunks, but with the cherry tomatoes, you can leave them whole. Stir all this together very well and roast in the oven for 45 minutes at 400 degrees or until the vegetables are very soft and start to brown.</p>
